We are an affineur. Wheels reach us already made; from there we take them to maturity, portion them and pack them. Our name is printed on the Consorzio di Tutela Valtellina Casera e Bitto label, under “Stagionato da” — aged by.

What we do, in one line

Aging, portioning and packing of Italian cheese, in the province of Sondrio, for trade customers.

We are not a dairy. We do not handle milk or curd. Our work starts when a wheel arrives: from that point on we decide how long it stays in the cellar, how it is turned, when it is brushed, and in what condition it leaves. For an importer the distinction matters, because it changes who answers for what along the chain.

The three denominations where our role is documented

On wheels of Bitto DOP and Valtellina Casera DOP, the label applied by the Consorzio di Tutela Valtellina Casera e Bitto reads “Stagionato da: Bongetta Formaggi — Cosio Valtellino”. That is how the control system of the denomination records who carried out the aging.

Taleggio DOP leaves our plant wrapped in our own paper, printed with the company name, the mark of the denomination and the reference to the authorized control body.

None of this rests on our word: it is printed on the product itself.

The rest of the range

We also distribute Grana Padano DOP, Parmigiano Reggiano DOP, Gorgonzola DOP and Fontina DOP, along with fresh dairy, Valtellina specialties, cured meats and gift assortments.

Why a separate site from the online shop

The shop at bongetta.it sells to Italian consumers. This site does not sell, shows no prices and takes no orders. It exists to give a professional buyer abroad what they need before opening a negotiation: what we age, in what role, under what conditions, and what it takes to bring the product into their country.
